The Cow Saloon & Eatery was founded in April of 2022. Ron & Jodie Redfern, along with Brian & Samantha Franzen-their son-in-law and daughter-purchased "The Mad Cow," a business that has been operating in the same location for 12 years prior. Ron & Jodie have been in Greeley since the 80s, and Brian & Samantha were both born and raised in the community. They were excited to put their own twist on a well loved establishment, and give Greeley another reason to head Downtown for food and fun.

The Cow Saloon & Eatery specializes in handcrafted, mouthwatering, sandwiches, soups, and cocktails. They have an extensive, and rare, whiskey collection, as well as a unique wine selection that will impress any connoisseur. And according to fans, they serve the "best prime rib in town" weekly on Prime Rib Thursdays.

As an ownership group, the Redferns & Franzens are passionate about great food, fun drinks, and atmosphere, and believe that at the end of any experience, each guest should leave with a smile on their face. From this focus, their famous tagline was born:
